Healthy Recipes ~ Cilantro Lime Cucumber Salad.

I absolutely love the traditional Asian Cucumber Salad and I am a Mexican fiend.  So when  I came across this recipe from the The Food Charlatan it was something I definitely had to post.

Cilantro-Lime Cucumber Salad

Ingredients

1 jalapeno, seeded and finely diced
2 cloves garlic, finely minced
3 tablespoons fresh lime juice
1/4 teaspoon crushed red pepper
½ teaspoon salt, or to taste
black pepper to taste
3 tablespoons olive oil
2 cucumbers, very finely sliced (see photos)

4 tablespoons minced cilantro, to taste
Instructions

Dice the jalapeno and garlic and add to a medium-sized bowl.
Add 3 tablespoons of fresh lime juice, crushed red pepper, salt, and pepper. Use a whisk to incorporate the 3 tablespoons olive oil. Set aside.
Finely slice the cucumbers. Use a mandolin if you have it, but a very sharp knife will do the trick. (See photos below.) Add the cucumbers to the dressing and stir together.
Finely mince the cilantro and add it to the bowl. Stir to combine. You can either let it sit in the fridge to marinate for a couple hours, or serve immediately.
Notes

Make sure that you let the salad sit on the counter for a little while before serving if it's been in the fridge; the olive oil solidifies slightly when it's cold.

My new Journey

So I'm on a new journey.  A journey of getting my health back on track.  I have so many things wrong with me and I am sure that a big part of it is due to my weight.  The weight gain has gotten out of hand and I am in and out of the hospital on a constant basis.

I choose to try again to change my life and involves juicing.  Nutri Bullet is the main tool in my day to day change in my life.  I cannot express how fulfilled I feel with my daily smoothies.  So right now it is smoothies and protein.    Eventually it will be just juicing/smoothies.
